Beef Tenderloin with Horseradish Sauce

This recipe is a great choice to impress those guests that you have coming over! ;)
Ingredients:
- 4 to 4 1/2lb trimmed beef tenderloin roast, tied
- 2 tablespoons neutral-flavor oil (such as grapeseed)
- Kosher salt and ground pepper To Taste
- 16 large fresh thyme sprigs
- 1 cup Sour cream
- 1/3 cup prepared horseradish cream
- 1/4 cup heavy cream
- 2 tablespoons chopped fresh oregano
- 1 tablespoon fresh lemon juice
Steps:
- 1 Position cooking racks in the upper and lower thirds of oven
- 2 Preheat to 450 degrees
- 3 Place the roast on a foil lined baking sheet, rub with oil
- 4 Season generously with the salt and pepper
- 5 Arrange half of the thyme sprigs under the roast and tuck the remaining sprigs under the twine all over the roast
- 6 Roast on lower rack until thermometer inserted into the center registers 125 degrees for medium rare, 40-45 minutes.
- 7 Let rest for 10 minutes
- 8 Serve with horseradish sauce
- 9 Instructions for Horseradish Sauce- In small bowl, whisk sour cream, horseradish cream, heavy cream, oregano, and lemon juice. Serve with roast
