Creamy Chicken Orzo

Description:
A creamy risotto like meal that is only better with some crusty bread.
Ingredients:
- 1 tablespoon Olive oil
- 2 ribs celery, chopped
- 1 onion, chopped
- 2 large carrots, peeled and sliced
- 4 garlic cloves, minced
- 8 cups chicken stock
- 2-3 cups chicken, cooked and shredded
- 1lb box orzo
- 1 tablespoon flat leafed parsley, minced
- 1 teaspoon Salt
- 1/4 teaspoon pepper
Steps:
- 1 Heat the olive oil in a large pot over medium heat.
- 2 Add the onion, celery and carrots and cook until the onion is translucent, about 7 minutes.
- 3 Add garlic and sauté for 2 minutes longer.
- 4 Add the chicken stock and bring to a boil.
- 5 Add the cooked, shredded chicken breast along with the orzo.
- 6 Reduce the heat to medium. Add the parsley, salt and pepper.
- 7 Maintain a simmer for 20 minutes, until the orzo is cooked through, the veggies are tender, and most of the liquid has been absorbed by the orzo.
