Creamy Chicken Orzo

Description:
A creamy risotto like meal that is only better with some crusty bread.
Ingredients:
  • 1 tablespoon Olive oil
  • 2 ribs celery, chopped
  • 1 onion, chopped
  • 2 large carrots, peeled and sliced
  • 4 garlic cloves, minced
  • 8 cups chicken stock
  • 2-3 cups chicken, cooked and shredded
  • 1lb box orzo
  • 1 tablespoon flat leafed parsley, minced
  • 1 teaspoon Salt
  • 1/4 teaspoon pepper
Steps:
  1. 1 Heat the olive oil in a large pot over medium heat.
  2. 2 Add the onion, celery and carrots and cook until the onion is translucent, about 7 minutes.
  3. 3 Add garlic and sauté for 2 minutes longer.
  4. 4 Add the chicken stock and bring to a boil.
  5. 5 Add the cooked, shredded chicken breast along with the orzo.
  6. 6 Reduce the heat to medium. Add the parsley, salt and pepper.
  7. 7 Maintain a simmer for 20 minutes, until the orzo is cooked through, the veggies are tender, and most of the liquid has been absorbed by the orzo.
