Winter Beef Stew

Description:
We know that the winter cold is a lot to handle, so we're bringing you a delicious Winter Beef Stew to warm you up.
Ingredients:
  • 1 1/2lbs boneless chuck roast, cut into 1 1/4 pieces
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 1 1/2lbs small red potatoes, cut into chunks
  • 1/2lb fresh mushrooms, halved
  • 1 cup unsweetened apple juice
  • 1/4 cup tomato paste
  • 1/2 cup fresh minced parsley
  • 2 bay leaves
  • 1/2 teaspoon Salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 strip bacon, cooked, crumbled
  • 3 medium carrots, cut into 1in pieces
  • 2 medium onions, quartered
Steps:
  1. 1 In Dutch oven, cook meat and chopped onion over medium-high heat until meat is browned on all sides.
  2. 2 Add garlic, cook for an additional minute.
  3. 3 Drain juices out of pan, add potatoes, carrots, quartered onions, and mushrooms
  4. 4 In a small bowl, combine broth, apple juice, tomato paste, parsley, bay leaves, salt, thyme, and pepper. Pour over meat.
  5. 5 Cover and bake at 325 degrees for 2 hours, then stir.
  6. 6 Bake for an additional 30-45 minutes until stew reaches desired thickness
  7. 7 Discard bay leaves.
  8. 8 Sprinkle with bacon and serve hot.
